Ovens, Fryers, Heat Lamp, 2 Monitors, and 2 Line Lights off

Slicer Cleaned (unplug, 3 removable pieces to dish, wiped down entire slicer)

Send pizza peel/paddle to dish, cleaned holder, and walls around it

Send all utensils to dish and received them back

Empty, clean, and put away garnish trays

All surfaces, shelves, oven (tops, sides, etc.), fryer, cooler/freezer doors and sides, and sinks cleaned and sanitized

Everything wrapped/covered with lids or plastic wrap (leftover pita chips, both bar top and drawers, meat and cheese)

Lids on Crackers

Both line cutting boards rinsed/sprayed, sanitized, propped up, and left to dry

Wiped down 4 oven catcher trays and 2 end pieces (soak when needed)

All stemless, pint, stemware, champagne, and wine chillers washed and surfaces on glass rack table cleaned and sanitized

All cardboard, garbage, emptied bottles taken out with new liners in garbage cans

Empty and sanitize all glass/plastic water pitchers (do NOT send through the dish machine)

All Wine Spittoons emptied

Wash in dish machine or soak in sanitizer any sponges/scrubs used

Empty and rinse all santiation bucks (grill, under 2 handsinks, dish)

Floors thoroughly swept, under all equipment and tables, moving garbage bins and carts

Floors thoroughly mopped, under all equipment and tables, moving garbage bins and carts

Dish machine off, drained, and 3 traps emptied/cleaned

Walls around sink areas and outside of dish machine cleaned

All dirty rags and aprons (tie strings) in dirty bin

Turn hood lights and hood off (very last thing before leaving)

Check cheese display cooler is completely shut

Soaked Fryer Parts: baskets, 2 side guards, and 2

Cleaned outside, doors, sides of oven

Cleaned fryer sides, doors

Sweep and mop basement

Clean outside of all coolers and freezers, using stainless steel polish after
